Easy fruit tarts from Land O'Lakes and Rachael Ray's 10-minute fruit tart are some easy fruit tart recipes. The Land O'Lakes recipe uses mini filo dough shells, while Rachael Ray's recipe uses a graham cracker crust.
To make the Land O'Lakes recipe, combine 1 package of softened cream cheese, 1/4 cup of Land O'Lakes sour cream, 1 tablespoon of orange juice and 1/2 teaspoon of vanilla in a bowl, and mix it well. Spoon about 1 teaspoon of this filling mixture into 15 thawed mini filo dough shells, and top them with fruit. Drizzle 1/4 cup of melted seedless strawberry jam over the fruit, and garnish the tarts with fresh mint leaves if desired.
To make Rachael Ray's 10-minute fruit tart, make 1 box of vanilla or lemon instant pudding mix. Let it stand for 5 minutes, and stir in 1 zested orange. Spread 1/2 a cup of seedless raspberry or blackberry preserves in a thin layer over the bottom of a prepared graham cracker crust, and top it with the pudding. Arrange 1/2 pint of raspberries, 1/2 pint of blackberries or blueberries, and 6 sliced strawberries on top of the pudding. Sprinkle the pie with 2 tablespoons of chopped fresh mint if desired.
