To make flat bread, pulse a package of active yeast, 1 3/4 cups all-purpose flour, 1/2 teaspoon sugar and 1 teaspoon salt together in a food processor. Add 3/4 cup of water in a steady stream until dough begins to form. Knead the dough until it is elastic.
Set the dough in a bowl and cover with a kitchen towel. Next, place the bowl in a warm area and allow the dough to rise for about one hour or until it has doubled in size. Form it into a ball and cut the dough into 20 pieces. Use a rolling pin to roll these out to 5- or 6-inch circles. Using an unoiled grill pan, cook each circle of dough about one to two minutes on each side or until the flat bread has puffed up. Top with additional ingredients and serve warm.
Flat bread can be used as a canvas for many flavor combinations. For a pizza-style flat bread, top with mozzarella cheese, tomato slices and fresh basil. A sweet and savory combination is sliced pear with blue cheese crumbles topped with a drizzle of balsamic vinegar. Flat bread can also be used to make dessert or a sweet breakfast. Top flat bread with ricotta cheese, fresh fruit slices and honey.
