An easy curry sauce recipe that is not overly spicy is mild yellow curry sauce using curry powder, onion, vegetable broth, milk and ginger. To make a mild curry sauce, forgo dried chilies, fresh peppers and black peppercorns.
Start a mild curry sauce by melting 3 tablespoons of butter in a saucepan and cooking 1/2 minced onion on low. Stir in 2 teaspoons of curry powder. Once the onion becomes translucent, add 3 tablespoons of flour, 3/4 teaspoon of salt and 1/4 teaspoon of ground ginger. Once the mixture bubbles, stir in 1 cup of vegetable broth and 1 cup of unsweetened milk. Bring everything to a boil, then remove the saucepan from the heat and serve with vegetables, rice or meat.
Another mild curry recipe leaves out the curry and uses herbs and spices instead. Saute one minced onion in 1 teaspoon of sunflower oil. After five to 10 minutes, add two crushed garlic cloves and 1/2 inch of minced fresh ginger. Mix in 1 teaspoon of yellow mustard seed, 1 teaspoon of ground coriander, 1 teaspoon of garam masala and 1/2 teaspoon of ground cumin. Cook for one to two more minutes. Add chicken stock and a cinnamon stick, simmering the sauce until it thickens.
