For an easy cubed steak recipe, dredge cubed steak in a crumb mixture, cook in a skillet, and cover with gravy. Another recipe uses cubed steak to make country-fried steaks.
To make garlic cubed steak, beat 2 eggs in a small bowl. In another bowl, crush 15 saltine crackers. Sprinkle the meat with 1/4 teaspoon of salt and 1/4 teaspoon of garlic pepper. Dredge the steak in the egg mixture and then in the cracker crumbs, coating both sides of the meat.
Heat 2 tablespoons of cooking oil in a skillet over medium-high heat and cook the steak for two minutes per side. Slice one medium onion, add it to the skillet and reduce the heat to low. Cover and cook for 30 minutes. Remove the steak from the skillet. To make the gravy, combine 3/4 cup of beef broth and 2 tablespoons of cornstarch. Add to the skillet and heat until boiling and thickened.
To make country-fried steaks, dredge the cubed steak in a bowl with 1/2 cup of Bisquick baking mix. Then dip the steaks into a bowl containing 1/2 cup of buttermilk. Toss the steaks with 1/2 cup of breadcrumbs.
Heat 1/3 cup of vegetable oil in a skillet, brown the steaks and remove them from the skillet. Cook 1 cup of thinly sliced onions until tender. To make the gravy, mix together 3 tablespoons of Bisquick with 2 cups of half-and-half and add to the skillet with the onions. Cook over low heat until thickened.
