Easy Crock-Pot recipes for two include beef stroganoff, cooking chopped onion, cream of mushroom soup, sliced mushrooms and pepper with beef. Another good, easy recipe for two is a creamy herbed chicken stew that calls for whipping cream, chicken broth, chicken and vegetables.
To make the chicken stew, layer 1 cup of baby carrots, a cut potato, 1/4 cup of chopped onion and 1/4 cup of diced celery in the bottom of a small slow cooker. Season the vegetables with 1/2 teaspoon of dried thyme, 1/8 teaspoon of salt and 1/8 teaspoon of pepper. Top the vegetables with 1/2 pound of boneless skinless chicken thighs and 3/4 cup of chicken broth. Cook the stew on low for six hours, add 1/2 cup of snap peas, and cook it for another 10 minutes.
Remove the chicken and vegetables from the slow cooker, and add 1/4 cup of heavy cream and 2 tablespoons of flour to the juices. Cook everything until the sauce thickens, and serve it over the chicken and vegetables.
Make beef stroganoff by mixing 1/2 pound of beef stew meat, 1/4 cup of chopped onion, a 10 3/4-ounce can of condensed golden mushroom soup, a 2.5-ounce jar of sliced mushrooms and 1/8 teaspoon of pepper to a Crock-Pot. Cook the ingredients covered for eight to 10 hours on low, and then stir in 1/2 cup of sour cream. Serve the stroganoff immediately over 1 1/2 cups of cooked noodles.
