Easy slow cooker recipes for chicken include salsa chicken, whole chicken and chicken stew. These recipes require four hours of cooking on high, or up to eight on low, for chicken to cook through safely.
To make salsa chicken, add boneless chicken, such as breasts or thighs, to the crock pot. Bone-in meat can be used, but it is more difficult to shred at the end of the cooking process. Cover the meat with a jar of salsa, then cook. Shred the chicken and mix with the salsa, then serve with tortillas or chips.
For cooking a whole chicken, clean out the inside, then rub it with a mixture of spices. Garlic powder, salt, pepper, paprika and thyme are good options. Optionally, fill the chicken with aromatic vegetables, such as onion, garlic, onion and celery, or add them to the cooker around the chicken for additional flavor.
Add a preferred cut of chicken, such as thighs, drumsticks or breasts, to a slow cooker for stew. Mix in vegetables, such as fingerling potatoes, onions and carrots, cut into bite-sized pieces, then add in seasonings. Seasoned salt, black pepper and parsley flakes are common flavorings. Add water to cover, then cook until done. To thicken the sauce, add in a slurry of 1/2 cup milk and 3 tablespoons of cornstarch near the end of cooking.
