Easy Crock-Pot dinners include BBQ chicken, made simply with chicken breasts and barbecue sauce, and beef stew, made with stewed meat, potatoes, carrots and beef broth. Another easy Crock-Pot dinner is spare ribs, which are boiled before cooking in a Crock-pot for several hours.
To make BBQ chicken, add 2 pounds of seasoned boneless, skinless chicken breast to the Crock-Pot. Mix 1 cup of BBQ sauce with 1/4 cup each of brown sugar and Italian dressing, and 1 tablespoon Worcestershire sauce. Pour the mixture over the chicken, then cover the Crock-pot and cook on high for three to four hours. When it's done, use two forks to shred the chicken, then serve on burger buns.
To make beef stew, add 2 pounds of chopped stew meat, 3 potatoes diced into 1-inch cubes, and 3 large diced carrots to the Crock-Pot. Add 3 diced onions and 1 diced celery rib, and pour in 1 cup of beef stock and 1 teaspoon Worcestershire sauce. Season with salt, pepper and fresh herbs, to taste. Stir, then cover the Crock-Pot, and cook for high for four to five hours.
To make spare ribs, boil 2 pounds of spare ribs for 15 minutes. Add the ribs to the Crock-Pot, along with 1 can tomato soup, 2 tablespoons soy sauce, and 1 tablespoon each of brown sugar and Worcestershire sauce. Pour the sauce over the ribs and cook for six to eight hours on low, until they're tender.
