An easy cream puff recipe combines flour, eggs, butter, sugar and water for the pastry and heavy cream, sugar and vanilla for the cream filling. Another recipe uses only heavy cream, milk and instant vanilla pudding mix to make the filling.
The Food Network provides an easy cream puff recipe that takes 65 minutes to make. Boil 1 cup of water, 8 tablespoons of unsalted butter, 1/2 teaspoon of salt and 1 1/2 teaspoons of granulated sugar. Remove the liquid from the heat, and stir in 1 cup of all-purpose flour. If the batter is too thin, return the pot to the stove, and heat it for 30 more seconds. Pour the batter into a mixing bowl, and blend it at medium speed. While the batter mixes, add 3 eggs one at a time.
Pour the dough into a pastry bag or dollop it onto a baking sheet to form 2-inch balls. Whisk 1 egg with 1 1/2 teaspoons of water, and brush the mixture over the dough. Bake the puffs for 15 minutes at 425 degrees Fahrenheit, and reduce the temperature to 375 F for another 20 minutes.
Meanwhile, whip 2 cups of heavy cream with 2 tablespoons of sugar and 1/4 teaspoon of vanilla until stiff peaks form. Poke a hole in the bottom of a cooled puff, and fill it with the cream mixture.
