Place 1/3 cup of all-purpose flour into the pan along with 1 tablespoon of Old Bay seasoning and 1/2 teaspoon of parsley flakes.
Make a roux by whisking the flour with the butter and onion mixture until fully incorporated. Continue to whisk while gradually adding 4 cups of milk or half-and-half, making sure the mixture is well-blended and smooth. Bring the mixture to a boil before adding 1 pound of lump crab meat and reducing the heat to low. Simmer the soup for about 20 minutes while stirring occasionally.
If desired, stir in 3 tablespoons of dry or cooking sherry wine and continue to heat for one to two minutes. If desired, garnish with additional Old Bay seasoning and serve hot.
