An easy cream cheese corn recipe requires 1 teaspoon of olive oil, 1/2 cup of chopped onions, 1/4 cup of softened butter, 6 ounces of softened cream cheese and a 15-ounce drained can of whole kernel corn. You can substitute frozen corn for the whole kernel corn if needed.
In addition, this recipe calls for another 15-ounce can of creamed corn, a 4-ounce can of chopped chili peppers and a 3-ounce package of French-fried onions. Before combining ingredients, set the oven to 350 degrees Fahrenheit to preheat. Sauté the onions in the oil over medium heat until they become translucent. Mix together the cream cheese and butter in a large bowl, and then stir in some of the sautéed onions and all of the whole corn, creamed corn and chili peppers.
Pour this mixture into a baking pan, and set it in the oven for 15 minutes. After 15 minutes, take the pan out of the oven, and sprinkle the French-fried onions on top of the casserole along with the sautéed onions. Put the pan back into the oven, and let it bake for another 15 minutes or until the top appears golden brown. Other recipes suggest sprinkling cheddar cheese on top of the casserole as it bakes.
