Some easy corn fritter recipes call for fresh, canned or frozen corn and flour, along with various items such as eggs, oil or baking powder. An easy recipe from the Food Network uses corn and flour in conjunction with self-rising cornmeal.
Make easy corn fritters by mixing together 1 1/4 cups of self-rising cornmeal, 1 1/4 cups of all-purpose flour, 1/4 cup of sugar and 1 teaspoon of salt. Whisk 1 cup of milk and 2 large eggs together in a separate bowl. Gradually add the milk and egg mixture into the cornmeal mixture until thoroughly combined, then mix in 1/4 cup of melted butter and a 15-ounce can of drained corn. Pour at least 2 inches of oil into a pan, and heat. Drop balls of cornmeal batter into the hot oil, and cook for a few minutes until the balls are golden brown.
Corn fritters can also be cooked in pancake form. Combine 2 cups of thawed frozen corn, 1 beaten egg, 1 teaspoon of sugar and 1/2 teaspoon of salt in a bowl. Mix in 1 tablespoon of melted butter, 2 teaspoons of baking powder, 1 cup of flour and 2/3 cup of milk. Form the batter into patties, and fry them in 1 tablespoon of hot canola oil. Place the golden brown fritters on a paper towel to drain before serving.
