Make easy corn fritters by mixing together 1 1/4 cups of self-rising cornmeal, 1 1/4 cups of all-purpose flour, 1/4 cup of sugar and 1 teaspoon of salt. Whisk 1 cup of milk and 2 large eggs together in a separate bowl. Gradually add the milk and egg mixture into the cornmeal mixture until thoroughly combined, then mix in 1/4 cup of melted butter and a 15-ounce can of drained corn. Pour at least 2 inches of oil into a pan, and heat. Drop balls of cornmeal batter into the hot oil, and cook for a few minutes until the balls are golden brown.
Corn fritters can also be cooked in pancake form. Combine 2 cups of thawed frozen corn, 1 beaten egg, 1 teaspoon of sugar and 1/2 teaspoon of salt in a bowl. Mix in 1 tablespoon of melted butter, 2 teaspoons of baking powder, 1 cup of flour and 2/3 cup of milk. Form the batter into patties, and fry them in 1 tablespoon of hot canola oil.
