Chocolate chocolate chip cookies, oven-roasted fruit and oven-fried chicken are easy recipes for a convection oven. Any recipe is adaptable for a convection oven by lowering the temperature and cutting the cooking time.
To make chocolate chocolate chip cookies, sift 1 1/4 cups of flour with 2 tablespoons of unsweetened Dutch cocoa powder, 3/4 teaspoon of salt and 1 teaspoon of baking powder. In a double boiler, melt 1/2 cup of unsalted butter with 3/4 pound of bittersweet chocolate chips.
Remove the chocolate from the heat, and stir in 1/2 cup of sugar. Blend in 3 eggs one at a time. Add the flour mixture, and stir until just blended. Chill the dough for 10 minutes, and drop rounded tablespoons of dough onto a baking sheet lined with parchment paper. Bake the dough in a convection oven at 350 degrees Fahrenheit for 10 minutes.
For oven-roasted fruit, remove the pits from 6 peaches and 6 plums, and cut the fruit into quarters. Place the fruit with their cut sides up in a single layer onto baking dishes. Sprinkle the fruit with 1/2 cup of sugar, and top it with 1 1/2 cups of raspberries. Bake at 425 F for 20 minutes. Grill the fruit for five minutes, and serve it sprinkled with orange juice.
For oven-fried chicken, combine 1 1/2 cups of bread crumbs with 1/2 cup of shredded Cheddar cheese, 3/4 teaspoon of chili powder and 1/2 teaspoon of salt. Whisk 2 large eggs. Dredge chicken pieces in the egg and then the bread crumbs. Bake at 350 F for 45 minutes.
