An easy chocolate pudding recipe from the Food Network requires whole milk, sugar, natural cocoa powder and cornstarch. It also uses large egg yolks, pure vanilla extract, fine salt and whipping cream. Preparation time is five minutes, and cooking time is 15 minutes. One recipe yields six servings.
Pour 1 1/2 cups milk, 1/2 cup sugar and 1/3 cup cocoa powder into a non-reactive saucepan, and simmer over a medium-high heat. Remove the saucepan from the stove and set aside.
Combine 1/2 cup milk, 4 teaspoons cornstarch, 1/4 teaspoon salt, 3 egg yolks and 2 teaspoons vanilla in a bowl. Slowly stir the heated milk mixture into the egg mixture. Pour into the saucepan, and stir over a medium-high heat until the pudding comes to a boil. Lower the heat, and simmer and stir for two to three additional minutes or until the pudding thickens.
Transfer the pudding into 6 small cups, and wrap in plastic. Refrigerate until the pudding sets. Prior to serving, place 3/4 cup whipping cream in a chilled bowl. Stir with a whisk or a hand-held mixer until peaks form. Do not over-stir the cream. Spoon the whipped cream on top of the pudding cups and serve.
