Place the chopped vegetables and 1/2 cup of onion into the bottom of a 2 1/2-quart slow cooker. Sprinkle the seasonings over the vegetables, using 1/4 to 1/2 teaspoon each of the herbs and salt, as desired. Add 1/2 cup of minced onion, and cover the mixture with the chicken breasts. Pour the cream of chicken soup over the top, and cook.
A larger recipe for easy slow cooker chicken stew uses 2 cups of cooked, diced chicken meat; 10 cups of assorted vegetables, such as carrots, celery and potatoes; 2 to 3 teaspoons of powdered vegetable bouillon; 2 cloves of chopped garlic and 1 tablespoon of corn starch. Combine the chicken, vegetables and garlic in the slow cooker. Mix the vegetable bouillon with 6 cups of water, and pour the mixture over the chicken and vegetables. Cook on low until the vegetables are soft, about 7 to 8 hours. Mix the cornstarch with a small amount of water, and whisk it into the stew.
