Easy Chicken Salad
Classic chicken salad is quick and easy to make and can be served as a sandwich or over a bed of greens. This recipe can easily be modified, and halved seedless grapes, toasted pecans or dried cranberries make excellent additions. For a sandwich, use rolls, French bread or sourdough slices and consider topping with creamy blue cheese. For an even quicker option, dice a whole roasted chicken.

- 2 cups cooked chicken, diced
- 1/2 cup celery, diced
- 1/2 cup mayonnaise
- 1 teaspoon Dijon mustard
- 1/3 cup scallions, finely chopped
- 1-1/2 teaspoons fresh dill, minced
- 2 teaspoons fresh lemon juice
- Ground black pepper
- Cook the chicken
- Mix the ingredients together
If the chicken is not already prepared, boil 3 lbs. of chicken breast halves in 6 cups of chicken broth or water. Allow the chicken to cool before dicing.
In a large bowl, combine the chicken, celery, mayonnaise, Dijon mustard, scallions, dill and lemon juice. Season with salt and black pepper to taste. Serve on a bed of greens or on bread for a sandwich.
