Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 egg
  • Juice and zest of 1/2 lemon, divided
  • Juice and zest of 1 lime, divided
  • 2 tablespoons minced garlic, divided
  • 1/2 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

  1. Beat the egg with half the lemon and lime juices, zest and garlic. Pour the mixture into a large resealable bag.
  2. Add the chicken to the bag, seal it and place it into the refrigerator to marinate for at least 30 minutes, or up to eight hours.
  3. Preheat the oven to 400 degrees Fahrenheit. Line a baking sheet with aluminum foil and spray it lightly with cooking spray.
  4. In a wide, shallow bowl, combine the breadcrumbs and Parmesan. Dip both sides of the chicken in the mixture before lining them up in the center of the sheet pan.
  5. Add the broccoli and cauliflower to a bowl. Drizzle the olive oil over the vegetables and add the other half of the juice, zest and garlic. Mix well to coat the veggies.
  6. Arrange the vegetables on the sheet pan around the chicken and sprinkle everything with salt and pepper to taste.
  7. Bake for 15 minutes, flip the chicken and bake for another 15 to 20 minutes, or until the internal temperature reads 165 F when an instant-read thermometer is inserted in the meatiest part.
  8. Serve the chicken and vegetables, spooning the pan juices over top and sprinkling fresh parsley to garnish the plates.
