Easy Chicken Recipes: Sheet Pan Citrus Chicken and Vegetables

Easy, healthy and full of flavor, this sheet pan chicken recipe comes together in a snap, and cleans up quickly for the ultimate in easy chicken recipes. Great for a weeknight meal but elegant enough to use for company, this recipe works well for dinners of all types. Plus, it's a breeze to modify for variations to please any palate.


1. Beat the egg with half the lemon and lime juices, zest and garlic. Pour the mixture into a large resealable bag.

2. Add the chicken to the bag, seal it and place it into the refrigerator to marinate for at least 30 minutes, or up to eight hours.

3. Preheat the oven to 400 degrees Fahrenheit. Line a baking sheet with aluminum foil and spray it lightly with cooking spray.

4. In a wide, shallow bowl, combine the breadcrumbs and Parmesan. Dip both sides of the chicken in the mixture before lining them up in the center of the sheet pan.

5. Add the broccoli and cauliflower to a bowl. Drizzle the olive oil over the vegetables and add the other half of the juice, zest and garlic. Mix well to coat the veggies.

6. Arrange the vegetables on the sheet pan around the chicken and sprinkle everything with salt and pepper to taste.

7. Bake for 15 minutes, flip the chicken and bake for another 15 to 20 minutes, or until the internal temperature reads 165 F when an instant-read thermometer is inserted in the meatiest part.

8. Serve the chicken and vegetables, spooning the pan juices over top and sprinkling fresh parsley to garnish the plates.

Tips and suggestions: There are lots of ways to switch this easy chicken recipe up. For example, by omitting the egg, breadcrumbs and parsley, you achieve more of a roasted chicken breast effect. You can also, swap out the seasonings. For example, use halved plum tomatoes, white beans and zucchini instead of the cauliflower and broccoli, along with Italian seasonings and some balsamic vinegar for a Tuscan take on this simple chicken recipe. Add potatoes for a complete meal.
