An easy chicken recipe that uses capers and tomatoes is chicken in tomato-caper sauce. Cook tomatoes, capers, spinach, basil and cayenne in oil, and add the chicken before sprinkling everything with cheese. Another recipe also has a tomato-caper sauce that includes tarragon, wine and tomato paste.
To make an easy chicken, tomatoes and capers recipe, cook four boneless, skinless chicken breasts in a skillet containing 1 tablespoon of olive oil. Once the chicken is browned, remove it from the skillet, and add another tablespoon of olive oil. Rub olive oil over a baking dish, then add the chicken breasts. Pour the tomato and caper mixture over the chicken, and roast at 425 degrees Fahrenheit for 10 to 15 minutes. Sprinkle the chicken with chopped basil, and serve.
