To make Ellen's Chicken Cacciatore, heat 2 tablespoons of olive oil over medium heat, and brown six boneless, skinless chicken thighs in the skillet for around five minutes per side. After setting the chicken aside, cook one chopped onion and one 8-ounce package of sliced fresh mushrooms in the same skillet for around five minutes. Add two cloves of minced garlic, and cook for another one to two minutes.
