To prepare an easy chicken and biscuits recipe, mix boneless chunks of chicken breast, vegetables, seasonings and sauce in a skillet, and cook the mixture until it is hot and bubbly. Finally, serve the mixture over freshly made biscuits.
Preheat the oven to 450 degrees Fahrenheit. Mix 2 1/4 cups of Bisquick baking mix and 2/3 cup of milk until it forms a soft dough. Divide the dough into 6 equal parts, and drop them onto a baking sheet. Bake the dough in the preheated oven for up to 10 minutes or until a light golden brown.
Heat 1 tablespoon of vegetable oil in a skillet placed over medium-high heat. Cut 1 1/4 pounds of boneless, skinless chicken breasts into bite-sized pieces. Add the chicken to the skillet with 1/2 teaspoon of dried thyme and 1/4 teaspoon of pepper. Cook the chicken until it is no longer pink in the middle. After the chicken is fully cooked, add 1/2 teaspoon of Dijon mustard, 1 12-ounce bag of frozen mixed vegetables and 1 10-ounce container of Alfredo sauce. Reduce the heat to medium, cover the skillet, and cook the mixture for six to eight minutes or until hot and bubbling.
Split the biscuits into halves, and serve the chicken mixture over them.
