To make an Oreo cheesecake, crush 28 Oreos and add 1/4 cup melted butter to make the crust. Mix together four 8-ounce packages cream cheese, 1 cup sugar, 1 cup sour cream, four eggs and 1 teaspoon vanilla. Pour into the pan, top with remaining Oreos, and bake 70 minutes.
Food.com offers an alternate Oreo cheesecake recipe using chocolate chips and Oreo cookies. Start with 1 1/2 cups crushed Oreos mixed with 2 1/2 tablespoons melted butter. Press the mixture into a 13-inch by 9-inch baking pan or 9-inch springform pan. Add 1/2 cup mini chocolate chips to the top of the crust.
Mix together two 8-ounce packages softened cream cheese and 3 teaspoons vanilla. When mixture is smooth, add two large eggs and 2 tablespoons flour, mixing until combined. Next, mix in 3/4 cups canned evaporated milk and 1/2 cup sour cream. Mix until smooth. Pour over the Oreo crust. Top the filling with 1 cup mini-chocolate chips, and bake at 300 degrees Fahrenheit for 25 minutes. Remove the pan from the oven, and refrigerate immediately for at least five hours.
Alternatively, use butterscotch chips, mint chocolate chips or other flavored chips in place of the mini chocolate chips when making the crust. Substitute flavored Oreos, such as mint chocolate chip Oreos, to add more variety.
