An easy way to make cauliflower casserole for four people is to wash and break 1 medium cauliflower head into florets, cook it for 10 minutes, drain it and then place it in a 1-quart casserole dish. Mix 1/2 cup of mayonnaise, 1/2 cup of shredded Cheddar cheese, 1/2 teaspoon of dry mustard, 1/4 teaspoon of salt and 1/8 teaspoon of red pepper. Pour the mixture over the cauliflower, and bake it at 400 degrees Fahrenheit for about 10 minutes.
Another way to make the cheese sauce is to combine 1/2 cup of sour cream, 1/2 cup of shredded Cheddar cheese, 1/8 cup of grated Parmesan cheese, 1/4 cup of crushed corn flakes, and 1/4 cup of finely chopped green and red bell peppers. Add in 1/2 teaspoon of salt.
Once the topping is mixed well, stir in cooked cauliflower florets equivalent to 1 medium cauliflower head, and pour the mixture into a greased 1-quart casserole dish. Sprinkle Parmesan cheese and paprika over the dish according to taste.
Bake the dish uncovered in an oven at 325 F for 30 to 35 minutes or until heated through. This recipe also serves four, and it is ready in approximately 45 minutes.
