An easy Caesar salad recipe consists of fresh romaine lettuce, olive oil, anchovy paste, lemon juice and Parmesan cheese. The salad makes a great side dish or an entire meal when grilled chicken breast slices are added.
The recipe below provides the classic flavors of an authentic Caesar salad and only takes a few minutes to prepare. The instructions below make a salad for up to six people and is only 175 calories per serving with 15 grams of fat. To reduce the recipe to 115 calories per serving with only 9 grams of fat, decrease the olive oil to 3 tbsp, add 2 tbsp of water to the anchovy mix and increase the lemon juice to 1/4 cup.

- 1/3 cup olive oil
- 3 tablespoon lemon juice
- 2 teaspoon anchovy paste
- 1 teaspoon Worcestershire sauce
- 1/4 teaspoon salt
- 1/4 teaspoon ground mustard
- 1 garlic clove, minced
- 10 cups romaine lettuce, chopped
- 1 cup croutons, garlic flavored
- 1/3 cup Parmesan cheese, grated
- freshly ground black pepper to taste
Step 1: In a large bowl, combine olive oil, anchovy paste, lemon juice, salt, Worcestershire sauce, ground mustard and garlic until well blended.
Step 2: Add the Romaine lettuce to the dressing mix. Toss the lettuce in the dressing until well coated.
Step 3: Top the salad with garlic croutons, grated Parmesan cheese and freshly ground pepper and toss.
If anchovy paste is not available, drain anchovy fillets and cut them up to add to the dressing mix.
