To make the Taste of Home cake, toast 2 and 2/3 cups of chopped pecans in 1/4 cup of melted butter in an oven heated to 350 degrees Fahrenheit for 20 to 25 minutes. Set the toasted pecans aside, and cream 2 cups of sugar with 1 cup of softened butter. Beat in 4 eggs, one at a time, and add 2 teaspoons of vanilla.
Mix 3 cups of all-purpose flour with 2 teaspoons of baking powder and 1/2 teaspoon of salt. Add the dry mixture to the butter mixture alternately with 1 cup of milk. Stir in 1 and 1/3 cups of the prepared pecans.
Divide the batter evenly among 3 greased and floured 9-inch cake pans, and bake at 350 degrees Fahrenheit for 25 to 30 minutes. To make the frosting, gradually beat 8 to 8 1/2 cups of confectioner's sugar into 1 cup of softened butter. Add a 5-ounce can of evaporated milk, 2 tablespoons of vanilla and the remaining pecans. Beat until smooth. Spread the frosting between the layers of cooled cake and on the tops and sides.
