Broccoli rice casserole is relatively easy to prepare and the dish can be made in under an hour. The rice casserole recipe is ideally served as a side dish to accompany a main course. The recipe shown here makes use of simple ingredients such as butter, onions, cheese sauce and a commercially produced chicken soup.
Broccoli Rice Casserole
The addition of a creamy cheese sauce gives this side dish a unique and creamy texture.

- 16 ounces frozen broccoli, chopped
- 1 1/2 cups long grain white rice, cooked
- 1 large onion, chopped
- 1/2 cup butter
- 8 ounces pasteurized process cheese sauce
- 1/3 cup milk
- 1 (10 1/2-ounce) can condensed cream of chicken soup
- Saute the onion
- Add the other ingredients
Place the baking dish into the oven and bake at 350 degrees Fahrenheit for about 30 minutes.
Place a 10-inch skillet over medium heat and heat the butter. Add the onions and cook until they become translucent, stirring from time to time.
Add the broccoli to the skillet while it becomes tender-crisp, stirring occasionally. Add the milk, soup, cheese sauce and cooked rice. Stir and cook until the cheese has melted. Pour the contents of the skillet into a 2-quart shallow baking dish.
