Betty Crocker's easy breakfast casserole recipe contains quintessential breakfast ingredients combined in one dish, including eggs, hash browns and biscuit mix. The casserole also contains vegetables for added color and crunch, as well as meat. This recipe feeds as many as 12 people.

Impossibly Easy Breakfast Bake

This recipe can be made to serve fewer people if it is prepared in a 9-inch pie plate. The recipe simply needs to be halved and baked for 30 to 35 minutes. It can also be prepared ahead of time and lasts in the refrigerator for 24 hours. It will just need to bake for a bit longer than the recipe calls for.

  • 2 12-ounce packages pork sausages
  • 1 medium bell pepper, chopped
  • 1 medium onion, chopped
  • 3 cups frozen hash brown potatoes
  • 2 cups shredded cheddar cheese
  • 1 cup Bisquick mix
  • 2 cups milk
  • 1/4 tsp. pepper
  • 4 eggs
  1. Prepare the dish
  2. Preheat the oven to 400 F and grease a 13x9x2-inch baking dish. Combine the sausages and vegetables in a skillet over medium heat, and stir until the sausages are cooked through. Stir in the potatoes and all but 1/2 cup of the cheddar cheese, and add this combination to the baking dish.

  3. Add in the biscuit mix
  4. Combine the biscuit mix with the milk, pepper and eggs, and pour the mixture into the baking dish.

  5. Cook the breakfast casserole
  6. Bake the casserole, uncovered, in the oven for 40 to 45 minutes, and sprinkle it with cheese once ready. Bake for a couple of additional minutes until the cheese is melted and allow to cool before serving.
