To make BigOven's bourbon chicken recipe, cut 2 pounds boneless chicken breasts into bite-size pieces. Heat 1 to 2 tablespoons of olive oil in a large skillet, and brown the chicken pieces in the oil until the color appears lightly gold. Remove the chicken from the skillet, and add the remaining ingredients, which are 1 crushed garlic clove, 1/4 teaspoon ginger and 3/4 teaspoon crushed red pepper flakes. Decrease the amount of red pepper flakes to lower the spiciness. Add in 1/4 cup apple juice, 1/3 cup light brown sugar, 2 tablespoons ketchup and 1 tablespoon cider vinegar. Finish the sauce by adding in 1/2 cup water, 1/3 cup soy sauce and 1 tablespoon cornstarch, then cooking over medium heat until the ingredients blend well and dissolve.
Add the chicken pieces back into the mixture, and bring the ingredients to a hard boil. Reduce the heat, and simmer for 20 minutes uncovered, or until the mixture thickens to the desired consistency. Optional items for this recipe include serving it over white rice and adding 1 teaspoon of Sriracha sauce to turn up the heat. This recipe makes four servings.
