The Shaker bean soup from Taste of Home is easy to make and yields about 20 servings. To make it, cooks prepare great northern beans with vegetables and seasonings in a Dutch oven or crock pot.
To make Shaker bean soup, soak 1 pound of dried great northern beans according the instructions on the package. In a Dutch oven, bring the beans, 1 ham bone or 2 ham hocks, and 1 gallon of water to a boil. Reduce the heat, cover the Dutch oven and simmer the ingredients for 1 1/2 hours or until the meat starts to fall off of the bone. Take the bone or hocks out of the broth, setting them aside to cool before trimming the remaining meat off.
Add the meat trimmings, 1 large chopped onion, 3 diced celery ribs, 2 shredded carrots, 1/2 teaspoon of pepper, 1/2 teaspoon of dried thyme and some salt to taste to the Dutch oven. Cover it, and then cook for 30 to 60 minutes or until the beans and vegetables are tender. Add 2 tablespoons of brown sugar and a 28-ounce can of crushed tomatoes in puree, and then cook for 10 more minutes before stirring in 1 1/2 cups of finely shredded spinach. Serve this soup hot with bread or by itself.
