An easy banana pudding recipe uses sugar, cornstarch, milk, egg yolks, vanilla extract, butter, bananas and vanilla wafers. To make an optional meringue topping, use egg whites, cream of tartar and sugar.
Combine 3/4 cup sugar and 2 tablespoons cornstarch. Gradually add 3 cups milk, and stir. Simmer in a double boiler or in a custard pot over medium heat. Continuously whip until the mixture becomes thick. In a separate bowl, beat 4 egg yolks with a tiny portion of the heated pudding, and mix thoroughly. Place the egg mixture in the double boiler or custard pot, and cook for an additional two minutes.
Take the pudding off of the heat, and mix in 2 ounces butter and 1 teaspoon vanilla extract. Allow the mixture to cool, and pour into a 9-by-9-inch oven-proof baking dish. Layer with 3 medium sliced bananas and 1 12-ounce box vanilla wafers. Keep alternating between the pudding and the fruit and cookies, and top off with the pudding,
For the meringue topping, combine 3 egg whites and 1/4 teaspoon cream of tartar. Stir until soft peaks form, and slowly add 1/4 cup sugar as the peaks stiffen. Pour over the pudding, and bake until it turns brown.
