To make Giada De Laurentiis’ simple baklava recipe, preheat the oven to 350 degrees Fahrenheit. Place 1/2 cup each of almonds and walnuts along with 1/4 cup each of chopped dried apricots and plain bread crumbs into a food processor.
Add 2 tablespoons of sugar, 1 1/2 teaspoons of ground cinnamon, 1/4 teaspoon of ground cloves and a pinch of salt. Process the ingredients until they are finely shopped and thoroughly combined. Combine the processed ingredients with 2 tablespoons of melted butter and 3 tablespoons of honey in a small mixing bowl.
Lay out a sheet of phyllo dough on a clean work surface. Melt a stick of butter, minus 2 tablespoons. Lightly brush the phyllo sheet with the melted butter. Layer the sheet with another sheet of phyllo dough, and brush the new sheet with butter as well. Repeat this until you have 6 sheets of the dough.
Cut the dough into 12 equal portions by making 4 cuts lengthwise and 3 cuts widthwise. Place each piece in a section of a mini-muffin tin. Top each piece with 1 tablespoon of the filling, and then close the dough around the filling to create a small pouch. Bake the baklava until the outsides are golden brown, approximately 20 to 25 minutes.
