To make an easy baked salmon dish, preheat the oven to 400 degrees Fahrenheit, and sprinkle salt and pepper on the salmon fillet. Spray cooking spray onto a baking sheet, and lay the salmon skin-side down. Bake for 15 minutes or until the salmon flakes easily with a fork.
If your salmon fillets are wet, pat them dry with a paper towel. Add extra flavor, and keep the salmon moist by brushing each fillet with a thin layer of olive oil or melted butter before you season it. Wrapping the salmon in a foil packet before cooking can also prevent it from drying out. If you use a packet, reduce the heat to 350 degrees Fahrenheit, and increase the cooking time up to 30 minutes. Test for flaking by poking the fish with a fork and twisting gently.
For a different flavor profile, change the seasonings. Sprinkle the fish with sage and thyme, and lay each fillet on a bed of lemon slices for a classic flavor. Alternatively, replace the pepper with cayenne pepper for a hint of spice. Lay fresh dill sprigs over the salmon, or coat the fillets in a mixture of chopped garlic and butter. Other seasonings that pair well with salmon include lemon pepper and Italian herb blends.
