For the Chow's version of baked Italian meatballs, toss 1/4 pound of stale Ciabatta bread pieces in a small bowl and cover it with 3/4 cup of whole milk. Let this bread and milk mixture sit for at least 20 minutes to break the bread down. Mince 2 medium garlic cloves, 1 teaspoon fennel seeds, and salt and pepper into a paste. Combine 1 pound of ground beef, 1 pound of ground pork, 1 pound of ground turkey, the bread and milk mixture, 1/2 of a minced sweet onion and 3 large eggs, as well as the garlic-fennel paste, 1 tablespoon minced fresh oregano, 6 tablespoons of grated Parmigiano-Reggiano and 6 tablespoons of minced Italian parsley in a large bowl until evenly mixed.
Grasp a handful of the meat mixture in your hands and roll it into a 2-inch ball. Place this meatball onto a plate on the side and repeat the process until there is no meat mixture remaining. Preheat a sauté pan to medium-low heat and place each meatball into the pan, being careful not to let them touch. Cook the meatballs until they brown on one side, and then continue turning the meatballs.
After browning the meatballs thoroughly, transfer them into a Dutch oven and cover them with your favorite tomato sauce. Simmer the meatballs in the sauce at a medium heat with the lid removed for around 30 minutes. This recipe creates about six servings or 30 meatballs.
