An easy recipe for lemon pound cake by Gale Gand is published on FoodNetwork.com. The recipe calls for ingredients such as flour, baking soda, butter, sugar and eggs, and it takes about two hours to prepare.
Preheat the oven to 350 degrees Fahrenheit. Grease a 6-cup loaf pan with butter, and line it with parchment paper. Combine 1 1/2 cups of all-purpose flour with 1 teaspoon of baking powder and 1/2 teaspoon of salt in a medium bowl, and set it aside. Using a mixer with a whisk attachment, cream two softened sticks of butter before adding 1 cup of sugar and continuing to mix. Turn the mixer to a low speed, and add four eggs one at a time. Add 2 teaspoons of pure vanilla extract to the butter mixture, and mix again.
Work in alternated batches to add the flour mixture and 1/4 cup of lemon juice to the butter mixture, mixing after each addition until the mixture is just smooth. Pour the batter into the loaf pan, and bake it for about 65 to 75 minutes until the cake is raised in the middle and a toothpick inserted into the center comes out clean.
To make the glaze, mix 1/3 cup of sugar with 1/3 cup of lemon juice until the sugar dissolves. After letting the cake rest for 15 minutes, remove it from the pan and cover it with the glaze until it is fully soaked in. Let it rest at room temperature or in the refrigerator before slicing and serving.
