One easy no-bake dessert is chocolate-dipped bananas, made by dipping frozen banana halves in melted chocolate, then freezing again. Another no-bake dessert is peanut butter pie, made by mixing peanut butter with cream cheese, powdered sugar and whipped topping, and pouring it into a prepared pie crust. Serve it chilled.
To make the chocolate-dipped bananas, cut the bananas in half crosswise, and place a popsicle stick in the cut end of each half. Lay the bananas out on a baking sheet lined with parchment paper, and freeze until the bananas are frozen solid. Melt chocolate gently over the stove in a double-boiler. You can use any type of chocolate you prefer, such as milk or dark chocolate. For 5 bananas, melt about 3 cups of chocolate. Pour the melted chocolate into a tall, heat-proof container. Holding the bananas by the popsicle stick handle, dip each banana in the chocolate. You can then roll the chocolate-covered bananas in other toppings, such as crushed nuts, crumbled cookies or sprinkles. Place the dipped bananas back on the baking tray, and freeze again until the chocolate is solid.
To make peanut butter pie, use an electric mixer to combine 1 cup peanut butter and 8 ounces cream cheese until smooth, then beat in 1 1/4 cups powdered sugar and an 8-ounce package of thawed whipped topping. Pour the mixture into a prepared graham-cracker or chocolate-cookie crust. Chill the pie in the refrigerator for an hour before serving.
