One easy way to peel a rutabaga is to place it on a firm surface, slice a thin section from its top and bottom, and use a vegetable peeler or sharp knife to remove sections of its skin. If the rutabaga is very big, remove its skin in layers.
Alternatively, cut the rutabaga in half lengthwise, place the halves cut-side down, and then slice them crosswise into 1-inch pieces. Place the blade of a small knife under the skin at the end of each piece, and draw the knife back to peel away the skin.
When selecting rutabagas, buy smaller ones to make peeling easier. Always work with a sharp knife, since rutabagas are often difficult to peel.
