Preheat an oven to 350 F, and line 2 baking sheets with parchment paper. Beat 1 cup of softened butter with 1 cup of granulated sugar until creamy using a mixer on medium speed. Add 2 large eggs, 1 tablespoon of vanilla extract and 1/2 teaspoon of rum extract while continuing to beat. In a separate bowl, combine 3 1/4 cups of all-purpose flour with 2 teaspoons of baking powder and 1/2 teaspoon each of pumpkin pie spice and salt. Gradually add the flour to the butter and continue beating until combined.
Wrap the dough in plastic wrap and chill in the refrigerator for 1 hour. Roll the dough out to 1/4-inch thickness on a lightly floured surface. Use a cookie cutter to cut out cookies, and place them on the parchment paper-lined baking sheets. Bake for 8 to 10 minutes until the edges are lightly browned. Remove from the oven, and allow the cookies to cool for 2 minutes before removing to a wire rack to cool completely.
Optionally, make a cinnamon cream cheese frosting by mixing 8 ounces of softened cream cheese, 1 stick of butter and 1 tablespoon of pumpkin pie spice with an electric mixer. Add 3 cups of powdered sugar one cup at a time. Spread the frosting on the cookies.
