The easiest way to make coleslaw dressing is to mix 1 cup of mayonnaise with 1/4 cup of white wine vinegar and 1/4 cup of sugar. Miracle Whip can be substituted for mayonnaise, or mayonnaise can be omitted altogether for a low-fat, vinegar-based dressing.
Start by mixing 1 cup of mayonnaise or Miracle Whip, 1/4 cup of white wine or apple cider vinegar and 1/4 cup of sugar. Once fully combined, mix with 6 cups, or about 1 pound, of shredded cabbage or coleslaw mix to make a complete coleslaw.
For a vinegar-based variation, make the dressing by combining 1 cup of apple cider vinegar, 1 cup of sugar, 3 tablespoons of extra virgin olive oil and 1 teaspoon of freshly ground black pepper. If desired, add 1 teaspoon of finely minced garlic and 1 teaspoon of celery seeds. To make a complete coleslaw, mix the dressing with about 3 1/2 pounds of finely shredded cabbage that has been slightly dehydrated with granulated sugar and kosher salt, rinsed and then blotted dry with paper towels.
Coleslaw dressing can be made in advance and reserved in the refrigerator before use. Coleslaw dressing can also be frozen for use at a later time.
