An easy coconut cake recipe consists of all-purpose flour, baking powder, salt, coconut, sugar and a few other ingredients. This recipe takes an hour and 30 minutes to prepare and makes one 10-inch bundt cake.
To make the coconut cake, preheat the oven to 350 degrees Fahrenheit, and lightly grease a bundt cake pan. Then mix 2 cups of flour, 1 tablespoon of baking powder and 1 teaspoon salt in a medium-sized bowl, and set the flour mixture aside.
With an electric mixer, beat 1 cup of room-temperature butter and 2 cups of white sugar until the mixture is light and fluffy. The mixture should be a light brown color. Add in five room-temperature eggs, one at a time, letting each egg blend completely into the mixture before adding the next one. After this, pour 1 teaspoon of coconut extract into the mixture, and blend.
Add in the flour mixture and 1 cup of room-temperature buttermilk to the electric mixer bowl until everything is incorporated. Folds in 1 cup of coconut flakes into the mixture. Pour the batter into the greased bundt pan, and bake the cake for one hour or until a toothpick inserted into the cake comes out clean.
