One of the easiest teriyaki chicken recipes is composed of a soy-based sauce that is sautéed with chicken and served with vegetables and rice. The recipe takes 30 minutes to make and uses only seven ingredients.
To make easy chicken teriyaki, first make the sauce. Place 3/4 cup reduced-salt soy sauce and 1/4 cup honey in a small saucepan. Bring the mixture to a simmer over medium heat, and stir for five minutes or until the honey is dissolved. Add 1 1/4 teaspoons grated fresh ginger to the mixture, stir to combine and remove from the heat.
Next, cook the chicken. Season 1 pound of skinless chicken thighs with black pepper, and heat 4 teaspoons of vegetable oil in a frying pan over high heat. Add the chicken, and cook for three minutes on each side, or until browned. Reduce the heat to medium, add the sauce and cook for three minutes, flipping the chicken occasionally.
Place the chicken on a cutting board while letting the excess sauce drip off into the pan. Heat the sauce over medium heat for three minutes, or until it reduces and thickens. Cut the chicken crosswise into 1/2-inch pieces, and serve with sauce and a sprinkle of 2 medium, thinly sliced scallions. This recipe makes two to three servings.
