Some of the easiest fish sauce recipes are rich ketchup sauce, parsley sauce, fresh herb sauce and mint sauce. Make a quick tomato ginger sauce by cooking onion in oil, and adding ginger, tomatoes and salt. Simmer the sauce for 10 minutes, and serve over fish fillets.
Rich ketchup sauce is an accompaniment to fish requiring only ketchup, soy sauce, vinegar and hot sauce. Melt one stick of butter in a saucepan over medium heat. Add 1/4 cup of ketchup, 1/4 cup of soy sauce, 1/4 cup of red wine vinegar and 1/2 teaspoon of hot sauce. Mix everything together, and bring to a boil. Remove from heat, and serve over fish.
Make mint sauce by boiling 3 tablespoons of water in a small saucepan. Add 2 tablespoons of sugar, stirring until it completely dissolves. Add 1/2 cup of white wine vinegar, two cloves of minced garlic and 3/4 teaspoon of salt. Stir everything until thoroughly combined, then pour over 1/3 cup of chopped fresh mint. Allow it to cure for 15 minutes before straining the sauce through a sieve. Add more mint, and serve.
Fresh herb sauce requires no cooking. Simply stir 1/4 cup of finely chopped parsley, 1/4 cup of finely chopped arugula, 1 tablespoon of finely chopped oregano, 1 tablespoon of finely chopped marjoram and 1 teaspoon of minced garlic into 1/2 cup of extra-virgin olive oil. Mix in 2 teaspoons of red wine vinegar and season with salt and pepper.
