Preheat the oven to 185 degrees Fahrenheit. Place a wire cooling rack on top of a baking sheet, and spray it with cooking spray. A silicone mesh baking mat may also be used.
Use a vegetable peeler to remove the skin off of the mangoes.
Place the peeled mangoes on a clean cutting board, and cut each one into slices as evenly as possible. When you reach the flat pit, cut as close to the pit on both sides as possible and discard.
Place the mango slices on the wire rack, positioning them across the rack's bars to prevent the fruit from falling through.
Place the mangoes in the center of the oven, and let the slices bake for two to three hours, flipping them over every 30 minutes or so until they are dry to your liking. Cook them for less time if you want the mangoes to be chewy, or cook them longer if you prefer them to be crisp like chips.
