The semifreddo bellini, the pomegranate royale and ruby champagne cocktails are some good champagne drinks to serve at brunch. Martha Stewart's semifreddo bellini is a blended slushy with fresh fruit and a sweet peach flavor. Redbook's pomegranate royale and Bon Appetit's ruby champagne cocktail lend elegant touches to grownup brunch tables. All three drinks are made with chilled champagne.
To make two semifreddo bellinis, combine 1 cup of frozen chopped peaches and 1 cup of small ice cubes with 1/4 cup of peach schnapps, 2 tablespoons of champagne and 2 tablespoons of superfine sugar in a blender. Blend the mixture until smooth, pour it into glasses, and top each drink with 1/4 cup and 2 tablespoons of champagne.
The pomegranate royale only requires three ingredients and is made directly in the glass for an easy, no-mess brunch cocktail. Place 5 pomegranate seeds in a wine glass, add 1 ounce of pomegranate liquor, top with 4 ounces of chilled champagne, and serve.
For a champagne drink with a fresh citrus flavor, combine the juice of 2 Ruby Red grapefruits, measuring about 3/4 of a cup, and 1/4 cup of sugar. Let the mixture rest for five minutes, and strain the syrup into a small bowl. Measure 2 tablespoons of syrup into 4 6-ounce champagne flutes, fill them with 2/3 cup of chilled champagne, and garnish the flutes with fruit peels.
