Begin the Dorito casserole by preheating the oven to 350 degrees Fahrenheit. On the stove top, bring to a boil 2 10 1/2-ounce cans cream of mushroom soup, 1 1/2 cups of water, 1 10-ounce can of crushed, peeled tomatoes, and 1 teaspoon of jalapeño, seeded and minced. In another pan, cook 1 1?2 cups of chopped onions with 1 pound of ground beef. Slightly crush the contents of 1 13- to 16-ounce bag of traditional Doritos.
Put one layer of Doritos in a casserole dish. Top with a layer of ground beef and then a layer of the soup mixture. Repeat the layers as many times as necessary using the rest of the ingredients. Bake for 25 to 30 minutes.
For enchilada casserole, preheat the oven to 375 degrees. Crush 1 13-ounce bag of Doritos by hand in a large bowl. Remove 2 cups. Add 2 tablespoons grated onion, 1 10-ounce can of chili with beans, 1 10- to 15-ounce jar of enchilada sauce, 8 ounces of tomato sauce and 1 cup of shredded cheddar cheese to the bowl. Stir the ingredients with a rubber scraper.
Put the mixture into a 9-by-13-inch casserole dish, and bake for 20 minutes. After removing it from the oven, sprinkle the casserole with 1 1/4 cups sour cream, the remaining 2 cups of Doritos and 1/2 cup shredded cheddar cheese. Bake for five more minutes.
