To make an oven baked pork loin roast, combine seasonings with breadcrumbs and olive oil. Press the mixture into the top of the pork loin roast. Bake uncovered for 15 minutes before covering with foil and baking for an additional hour or until the pork loin roast is fully cooked.
Preheat the oven to 425 degrees Fahrenheit. In a small bowl, mix together 2 teaspoons of salt, 1 teaspoon of pepper and 1 cup of dried breadcrumbs. Add in 1/4 cup of olive oil, 2 tablespoons of minced garlic, 2 tablespoons of finely chopped fresh parsley and 2 tablespoons of a coarse, grainy mustard. Mix well to combine all ingredients completely. Allow the mixture to sit for five minutes to develop the flavors.
Place the pork loin roast into a foil-lined baking dish with the fat side up. Press the seasoning mixture into the top and sides of the roast and bake uncovered for 15 minutes. Remove the roast from the oven, cover with foil and bake for an additional hour, until the meat is fully cooked or until a meat thermometer reads 145 degrees Fahrenheit.
Remove the pork loin roast from the oven and allow it to sit for three minutes before carving.
