You can boil and mash rutabagas, flavoring them with butter and nutmeg. Another way to cook them is to roast them in the oven with simple seasonings. You can also combine rutabagas with other vegetables like carrots and parsnips to make a roasted winter vegetable dish.
To make mashed rutabagas, peel two pounds of sweet potatoes. Place them in salted water, and bring it to a boil. After boiling for 30 to 40 minutes, drain the rutabagas and mash them along with 3 to 4 tablespoons of butter and a pinch of nutmeg.
To make simple roasted rutabagas, peel and cube one rutabaga and then toss it with 3 tablespoons olive oil and salt and pepper to taste. Roast in a 425 F oven for about 40 minutes, and toss with 1/2 teaspoon cider vinegar and chopped parsley before serving.
In order to make roasted winter vegetables, place 5 pounds of peeled and sliced rutabaga in salted water, and boil for 5 minutes. Do the same thing with 5 pounds of peeled, sliced parsnips and 5 pounds of peeled, sliced carrots. Drain the vegetables, and place them in the refrigerator for one to two days. Toss the vegetables with 1 1/4 cups vegetable oil, 1/4 cup dried basil and 3/4 teaspoon salt. Spread them on a baking sheet, and roast in a 425 F oven for 30 minutes, turning over every 10 minutes. Sprinkle with parsley before serving.
