Make Ina Garten's seafood chowder by sauteing 1 cup of diced carrots, 1/2 cup of diced yellow onion, 1 cup of diced celery, 1 cup of diced red potatoes and 1/2 cup of corn kernels in 1/4 pound of melted unsalted butter for 15 minutes. Stir in 1/4 cup of all purpose flour, and continue to cook for another three minutes at low before pouring in 1 quart of seafood stock. Bring the mixture to a boil, and add 1 pound of large shrimp, 1/2 pound of scallops, 1/2 pound of monkfish and 1/2 pound of fresh lump crab meat. Simmer the soup for 10 minutes before adding 1 1/2 tablespoons of heavy cream, 2 tablespoons of minced parsley, and salt and pepper to taste.
To make crab chowder, cook 2 slices of bacon in a saucepan until it turns crispy, and then remove the bacon before adding 1 diced onion, 2 chopped potatoes and 1/2 cup of water. Simmer the mixture covered for 15 minutes, and add 3 cups of whole milk and 1/8 teaspoon of cayenne. Stir in 1/2 pound of jumbo lump crab meat and salt and pepper to taste, and serve it topped with the bacon and fresh parsley.
