Variations on the classic egg salad sandwich are limitless with additions such as cheese, Dijon mustard, carrot, ham and cucumber. Many different herbs and spices complement egg salad as well, including curry powder, paprika, garlic and dill.
To make "Bon Appetit's" curried egg salad sandwich, combine 1/4 cup of mayonnaise, 2 tablespoons of thinly sliced scallion, 1 tablespoon of minced shallot, 1 1/2 tablespoons of apple cider vinegar and 1 1/2 teaspoons of Dijon mustard powder. Whisk in a heaping 1/2 teaspoon of curry powder and 1/4 teaspoon of ground cumin. Stir in 4 chopped hard-boiled eggs and one Granny Smith apple cut into 1/8-inch cubes. Season the mixture with salt and pepper.
