Some Calabrese recipes that come from the Calabria region of Italy are pizza Calabrese and Calabrian chile pasta. Other good recipes include fried Italian peppers with anchovies, spaghetti with roasted tomatoes and marinated eggplant.
Make pizza Calabrese by combining 1 tablespoon of active dry yeast and 1 cup of warm water and allowing it to sit until it bubbles. Stir in 2 1/2 cups of pizza flour and 1 teaspoon of sea salt, and allow the dough to rise covered in four separate balls for 24 hours before stretching them into pizza shapes. Top the pizzas with 4 cups of canned tomato sauce, 1 pound of sliced fresh mozzarella, 40 slices of Italian salami, 16 chopped basil leaves and 4 tablespoons of grated Parmesan, and drizzle them with olive oil and sea salt. Bake the pizzas at 350 to 400 degrees Fahrenheit until the crust turns golden brown.
To make fried Italian peppers with anchovies, remove the seeds from 6 long sweet Italian peppers, and stuff them with 1 anchovy fillet apiece. Place the anchovy-stuffed peppers in a skillet, and add 1/4 inch of extra-virgin olive oil. Fry the peppers at medium heat for 10 minutes, turning them often for even cooking. Remove them from the heat, and sprinkle them with salt before serving.
