Martha Stewarts Tiramisu and Cheesecake Brownies are both good recipes that use mascarpone. Boiled or fresh fruit can be mixed with mascarpone and sprinkled with sugar to create a simple dessert.
To make tiramisu, put 8 egg yolks and 1 pound of mascarpone in a bowl, whisk until smooth, then add 1 cup of granulated sugar and 4 ounces of almond biscotti crumbs. Whisk 8 egg whites, and fold them into the mixture. In another bowl, combine 2 1/2 tablespoons coffee liqueur with 1 1/2 cups cooled espresso. Prepare about 46 ladyfingers, either bought or homemade, and dip half of them in the mixture. Line them up on the bottom of a baking dish. Spread the mascarpone mixture over them and repeat the process to make a second layer. Put the finished dessert in the fridge for at least two hours before serving.
To make cheesecake brownies, preheat an oven to 350 degrees Fahrenheit. Butter a baking pan, and line it with parchment. Mix 3/4 cup all-purpose flour with 3/4 teaspoon baking powder and 1/4 teaspoon salt. Melt 6 ounces of chopped bittersweet chocolate and 4 tablespoons of unsalted butter together. Use an electric mixer to whisk together 3 eggs and 1 cup sugar. Stir in the melted chocolate, 1 teaspoon vanilla extract and the flour mixture. Spread evenly into the pan. Now beat together 1 pound mascarpone cheese, 2 eggs, 2 egg yolks, 1/3 cups sugar and 1/2 teaspoon vanilla. Pour over the chocolate mixture, and bake for about 35 minutes.
