Desserts that can be made with elderberries include elderberry coffee cake and elderberry pie. Elderberries can also be used along with cream and sugar to make elderberry ice cream.
To make elderberry pie, combine 1 cup white sugar, 1 tablespoon lemon juice and 4 cups elderberries in a bowl with 3 tablespoons cornstarch whisked with a little water. Once the mixture reaches the desired thickness, pour it into a prepared pastry shell. Dollop butter on top of the elderberry filling. Cut another prepared pastry shell into strips, and weave a lattice over the top of the pie. Bake the pie at 375 degrees Fahrenheit for 40 minutes.
To make elderberry coffee cake, beat 8 ounces softened cream cheese until it has a light, fluffy texture, and then mix in 1/4 cup sugar and 1 egg. In another bowl, sift together 2 cups all-purpose flour and 3/4 cup sugar, and cut in 1/2 cup cold butter chopped into chunks. Once the mixture forms pea-sized crumbles, remove 3/4 cup, and set it aside. Mix 1/2 teaspoon baking powder and 3/4 teaspoon baking soda into the rest of the butter and flour mixture.
In a separate container, combine 3/4 cup sour cream, 1 large egg and 1 teaspoon vanilla. Add this wet mixture slowly to the flour mixture until a thick batter forms. Spoon it into the bottom and around the edges of a springform pan, add the cream cheese mixture, and top everything with 8 ounces of hot elderberry jam. Sprinkle the reserved crumbles over the jam, and bake the cake at 350 degrees Fahrenheit for 50 minutes.
