Autumn stew and rice pudding are two delicious recipes for the Fagor pressure cooker. Its official site, Fagoramerica.com, offers a variety of recipes for the pressure cooker.
To make four servings of autumn stew, heat 1 1/2 cups of vegetable stock, 1 tablespoon of low-sodium soy sauce, 1 chopped onion, 1 diced red bell pepper, and 4 minced garlic cloves in the pressure cooker. Cook it over medium heat until the onion is translucent and most of the vegetable stock evaporates. Next, cut a 1-pound butternut squash in half and remove the seeds, peel it, and then cut it into 1/2-inch cubes.
Add the squash cubes, a 15-ounce can of chopped tomatoes, 1 cup of water, 1/2 teaspoon of oregano, 1 1/2 teaspoons of chili powder, 1/2 teaspoon of cumin, and 1/4 teaspoon of black pepper to the onion mixture. Lock the cooker's cover, bring it to high pressure, lower the heat, and cook for four minutes at high pressure. Release the pressure using the cold-water method. Finally, add a 15-ounce can of kidney beans and 1 1/4 cups of corn to the stew, then cook it for five minutes without the lid before serving.
To make four to six servings of rice pudding, heat 3 cups of milk in the pressure cooker, then stir in 1 cup of long grain rice, 2 tablespoons of butter, a pinch of salt and 1/2 teaspoon of lemon zest. Next, close and lock the cover, bring the ingredients to pressure on medium heat, and then cook for five minutes at high pressure. Third, release the pressure using the natural release method. Finally, stir in 1/2 cup of sugar, 1 tablespoon of vanilla extract, and 1 cup of raisins before serving.
